ALISSEC: Latest project developments

Since 2021 we are part of the ALISSEC project (Design of Healthy and Sustainable Food and Ingredients from the Circular Economy) which is funded by the 2021 call for Strategic Projects of the Government of Navarra.

As we mentioned in previous posts, this project, which was born within the Agri-Food Cluster of Navarra (NAGRIFOOD), is part of the challenge of researching new ingredients and foods that are nutritionally healthy and obtained through the application of the circular economy.

What progress has been made?

Over the last few weeks, we have relied on our consortium partners to be our expert tasting panel, which has allowed us to move forward with new prototype developments within the project.

On the one hand, they were able to taste prototypes of pea-based mince with vegetables and extracts:

On the other hand, they have also tasted wet extruded products with different vegetables and extracts.

Happily, we can report that the results were satisfactory, so they will be the basis for defining the final product in the following year. We keep on working!
