One of the best options for making use of the vegetable waste generated by the agri-food industries is to obtain new foodstuffs.
The project “Reuse of vegetable extrusion by-products through fermentation to obtain high added value ingredients” financed by the Government of Navarra in the Waste Fund 2022 grant call, as its name indicates, helps companies such as Sanygran to reuse by-products to revalue products obtained from milling.
The project step by step
This October marks the end of this project that Sanygran has been working on for the last few months. Here are some of the actions it has carried out to achieve its objectives:
Activity 1
Product design and definition of technical-economic feasibility
During this stage, the design of the product to be developed based on the fermented by-products was carried out, defining the formats, raw materials and their suppliers…
Activity 2
Laboratory-scale formulation and development
In this second stage, the main objective was to obtain formulations from fermented by-products that met our company’s quality standards. A total of 12 prototypes were proposed, elaborated with different formulations combining fermented products and other ingredients. From these 12 formulations, 6 were selected and different extrusion tests were carried out with them at laboratory level.
Activity 3
Pilot testing: Process and product validation
In this third and final activity, the main objective was achieved: to obtain viable formulations in a pilot environment based on fermented by-products that can be extruded again. In addition, a new industrial process and packaging system was defined to guarantee shelf life without losing the properties of the products developed.
Since our beginnings, we have always been committed to wellness, producing healthy, nutritious and environmentally friendly products. Thanks to this project and the help we have received, Sanygran has managed to take a big step forward in sustainability and circular economy. We will continue working to keep moving forward and improving!
